Whisky-salmon with beetroot

Whisky-marinade adds a smooth, smoky flavour to the salmon. Easily marinate the marinated fish the day before and leave in the fridge over night. Beetroot is one of my favourite vegetables. Not only it comes with its earthy flavour and  plant nutrient, it also has this amazing, intense color. A perfect combination.

A light and easy recipe. The taste of tuna goes very well with the freshness of water melon. A perfect salad for summer’s eve.

This was my qualification dish for the TV show The Taste 2018 in Germany. I like the unusual combination of couscous and the sweetness of corn. The saffron-sauce comes with a wonderful acidity, which goes very well with pike-perch.
